The Breakfast Burrito of Champions

Would the best version of yourself eat the fast food breakfast options? Probably not... so here is a delicious burrito to start your day. 

Ingredients:

  • 2 large whole eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped spinach
  • 1/4 cup cooked black beans
  • 2 tablespoons shredded low-fat cheese
  • 2 whole wheat or low-carb tortillas
  • 2-4oz of beef/meat (optional)
  • Salt and pepper to taste
  • Cooking spray or olive oil for cooking
     

Instructions:

  1. In a mixing bowl, whisk together the whole eggs and egg whites. Season with salt and pepper to taste.
  2. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil.
  3. Add the diced bell peppers and onions to the skillet and cook for 2-3 minutes until they start to soften.
  4. Add the diced tomatoes and chopped spinach to the skillet and cook for another 1-2 minutes until the spinach wilts.
  5. Pour the whisked eggs into the skillet with the vegetables. Stir gently to combine and cook until the eggs are scrambled and cooked through.
  6. Warm the tortillas in the microwave or on a separate skillet.
  7. Divide the cooked egg mixture between the tortillas, placing it in the center of each tortilla.
  8. Top each burrito with cooked black beans and shredded low-fat cheese.
  9. Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
  10. Serve immediately, or wrap each burrito in foil for an on-the-go breakfast.
