Protein Chocolate Chip Cookies

You've been doing great... here, have a cookie. But not just any cookie.

Ingredients:

  • 1 cup rolled oats
  • 1 cup vanilla protein powder
  • 1/2 cup almond flour
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter
  • 1/4 cup dark chocolate chips
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, protein powder, almond flour, baking powder, and salt.
  3. In a separate bowl, mix together applesauce, honey (or maple syrup), almond butter, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too dry, add a splash of almond milk to help bind it together.
  5. Fold in the dark chocolate chips until evenly distributed throughout the dough.
  6. Using a tablespoon or cookie scoop, scoop out dough and roll it into balls. Place the balls onto the prepared baking sheet and flatten them slightly with your hand or a fork.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  8. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
