Cottage Cheese Scrambled Eggs

Ingredients:

  • 2 large eggs
  • 1/4 cup cottage cheese
  • Salt and pepper to taste
  • Optional: Chopped fresh herbs (e.g., chives, parsley) for garnish

Instructions:

  • Crack the eggs into a bowl and beat them lightly with a fork or whisk until well combined.
  • Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or a small amount of oil.
  • Pour the beaten eggs into the skillet and let them cook undisturbed for about 1-2 minutes until the edges start to set.
  • Using a spatula, gently stir the eggs from the edges towards the center, allowing the uncooked eggs to flow to the edges.
  • Once the eggs are mostly cooked but still slightly runny, add the cottage cheese to the skillet.
  • Continue cooking and gently stir the eggs and cottage cheese together until the eggs are fully cooked and the cottage cheese is heated through, about 1-2 minutes more.
  • Season with salt and pepper to taste, and sprinkle with chopped fresh herbs if desired.
  • Remove from heat and transfer the scrambled eggs to a plate or serving dish.
