Chicken Protein Pasta

Pasta has a bad rep in the fitness industry. So here is your solution. We'll be using whole wheat pasta combined with chicken, broccoli, and a light creamy sauce, all ingredients that are beneficial for a fitness-focused diet.

Ingredients:

  • 200g whole wheat pasta (like penne or fusilli)
  • 300g chicken breast, diced
  • 200g broccoli florets
  • 2 cloves garlic, minced
  • 200ml low-fat Greek yogurt
  • 50ml low-sodium chicken broth
  • 30g grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: chili flakes for some heat

Instructions:

  • Cook Pasta:
    • Bring a large pot of water to a boil. Add a pinch of salt and the whole wheat pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  • Cook Chicken:
    • While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • Cook Broccoli:
    • In the same skillet, add a little more oil if necessary and toss in the minced garlic. Sauté for about 1 minute until fragrant. Add the broccoli florets and stir-fry for about 3-4 minutes until they are bright green and slightly tender.
  • Combine Ingredients:
    • Return the chicken to the skillet with the broccoli. Pour in the chicken broth and bring to a simmer. Stir in the Greek yogurt and half of the Parmesan cheese until you get a creamy sauce. Season with salt, pepper, and chili flakes if using.
  • Mix with Pasta:
    • Add the drained pasta to the skillet and toss everything together until the pasta is evenly coated with the sauce. Heat through for about 2 minutes.
  • Serve:
    Serve hot sprinkled with the remaining Parmesan cheese.
